I just got back from the store with two heaping bags full of fresh fruits and veggies.
My favorite food in the world is tomato soup. So I thought I’d try making it for the first time ever. It turned out great. Not the best soup I’ve ever had, but it’s still pretty good.
– 2 peeled Baja tomatos
– 2 cloves of garlic
– 1 cup vegetable broth
– 1/4 small yellow onion (about an inch big)
– half a carrot, sliced
– 1/2 cup low fat cottage cheese
– about a half handful of mushrooms
I put the carrot and onion in a cup with just a couple splashes of water and microwaved it for about two and a half minutes. Chopped the tomatoes in half, threw them in there with the garlic, microwaved again for about a minute, added the broth, cottage cheese, and mushrooms, and blended until smooth.
– Handful of grapes
– Two HUGE handfuls of spinach
– two apples
– big handful of strawberries
Juiced these together and mixed half and half with water.
Both of these recipes gave me enough for at least three servings.
